Theses courses have been produced in collaboration with the Campden & Chorleywood Food Research Association (CCFRA) bringing together the expert knowledge in the CCFRA's key topic books and the OU's expertise in distance learning. Each course contains a series of bite-size chunks devoted to both technical and managerial topics.
The courses are valuable to anyone involved in the management of food. They are specifically aimed at non-food specialists within the food industry.

- Developing food science skills: food composition and analysis
This course focuses on the nutrient and non-nutrient composition of food, enabling you to appreciate the role of chemical analysis in making safe, wholesome food. - Developing food science skills: food preservation and packaging
Develop your skills in preservation and packaging techniques and the microbiology behind the methods, and consider the issues of shelf-life and the recycling of packaging. - Developing food science skills: food microbiology and hygiene
Explore basic aspects of food microbiology, including detrimental and beneficial micro-organisms, and learn about food hygiene in terms of premises, equipment, cleaning and disinfection.
